Durante la temporada de Halloween, amigos y familiares se reúnen (este año con distanciamiento social, por supuesto) para tallar calabazas. Esta es una actividad divertida que muchas personas aquí en el condado de Eagle disfrutan, ¡Incluidos aquellos que se unieron a EVOM y las Navegadoras (Eagle Bounty Neighborhood Navigators) para una serie de tallado de calabazas este mes! Aunque muchas familias y amigos tienen la tradición de tallar calabazas, muchos no saben qué hacer con las semillas y terminan tirándolas. Ingredientes

  • Semillas de calabaza
  • Agua
  • 2 cucharaditas de aceite de oliva
  • Sal kosher
  • Condimentos al gusto

Instrucciones

  1. Quite las semillas de una calabaza parcialmente cocida o cruda.
  2. Enjuague las semillas para quitar los trozos de calabaza o cualquier hilo posible. NOTA: Esto es para eliminar cualquier cosa grande; la ebullición va a separar la mayor parte de las partículas pequeñas
  3. Precaliente el horno a 400 grados Fahrenheit.
  4. Ponga a hervir algunas tazas de agua y semillas; aproximadamente 2 tazas de agua por 1/2 taza de semillas. Agregue ½ cucharadita de sal por taza de agua. Nota: la cantidad de sal se puede aumentar o disminuir al gusto. Hervir durante 10 minutos.

Ingredientes

1 cucharadita de sal marina

Instrucciones

Para secar semillas de calabaza:

  1. Retire las semillas de las calabazas y enjuague bien. Esparza las semillas en una sola capa sobre una bandeja para hornear forrada con toallas de papel. Deje reposar a temperatura ambiente durante 24 horas; cambie las toallas de papel húmedas por toallas secas después de aproximadamente 12 horas; revuelva las semillas ocasionalmente.

Para cocinar las semillas de calabaza:

  1. Precaliente el horno a 325 grados Fahrenheit. Engrase una asadera grande muy ligeramente.
  2. En un bol pequeño, mezcle el azúcar, la canela y la sal. Reserve.
  3. Derrita el aceite de coco o la mantequilla en un bol grande apto para microondas o en la estufa en una olla de 4 cuartos.
  4. Retire del fuego y agregue la vainilla.

Si quedan blandas, regresa al horno, revisándolas cada 5 minutos. Continúe horneando en intervalos de 5 minutos hasta que estén listas.
  10. Una vez que las semillas estén listas, transfiéralas de la sartén tibia a otra sartén forrada con papel pergamino para hornear para que se enfríen.

During the Halloween season, friends and family gather together (this year with social distancing of course) to carve pumpkins. This is a fun activity that many people here in Eagle County enjoy. Including those who joined EVOM and the Neighborhood Navigators for a pumpkin carving series this month! Although many families and friends have the tradition of carving pumpkins, many do not know what to do with the seeds and end up throwing them away. However, they can be a really tasty treat. In this article you will find out some of the health benefits of pumpkin seeds and how to prepare them.

Pumpkin seeds can be a healthy addition to your diet. According to Colorado State University Extension, they contain minerals such as zinc, manganese, and magnesium, and are an excellent source of fiber as well as a variety of antioxidants. Pumpkin seeds can also help lower cholesterol and reduce health complications. Geoffrey Meru, from the University of Florida, explains that they can reduce the risk of some heart-related diseases as well as certain types of cancer. With so many benefits associated with pumpkin seeds, why not try something new this year!

“The Best Roasted Pumpkin Seeds” from Toni Dashi (Boulder Locavore)

Ingredients

  • Pumpkin Seeds or Winter Squash Seeds
  • 2 teaspoons Olive Oil
  • Kosher Salt
  • Seasonings to taste

Instructions

  1. Scrape any squash seeds out of a partially cooked or uncooked winter squash.
  2. Rinse the seeds to remove the major chunks of squash or any strings possible. NOTE: The boiling separates most of it; this is to remove anything large.
  3. Preheat the oven to 400 degrees.
  4. Bring to boil a few cups of water and seeds; about 2 cups of water to 1/2 cup of seeds. Add ½ teaspoon of salt per cup of water. Note: the amount of salt may be increased or decreased to taste. Boil for 10 minutes.
  5. After boiling, return seeds to a colander and rinse. Any remaining pumpkin particles or string will have separated; remove them from the seeds.
  6. Put the seeds in a bowl. Toss with 1-2 teaspoons of olive oil to coat the seeds and add salt and pepper to taste. Additional seasonings and spices may be added.
  7. Spread seeds in a single layer on a baking tray or in a shallow roasting pan in the upper portion of the oven.
  8. Bake until seeds begin to brown and are a consistency of your liking; usually 10-15 minutes. NOTE: Different size seeds may take different lengths of time to cook. TIP: the seeds change from the wet, grayish color to more of an opaque white then golden brown as they become fully roasted.
  9. Leave the seeds to cool on a rack until you can safely handle them.

“Homemade Cinnamon Sugar Pumpkin Seeds” from Laura (Joy Food Sunshine)

Ingredients

  • 3 cups pumpkin seeds dried for at least 24 hours
  • 3 TBS coconut oil or butter
  • ½ tsp pure vanilla extract
  • 4 TBS granulated sugar*
  • 2 tsp ground cinnamon
  • 1 tsp sea salt

Instructions

To dry pumpkin seeds:

  1. Remove [seeds] from pumpkins and rinse thoroughly. Spread out in a single layer on a baking sheet lined with paper towels. Let sit at room temperature for 24 hours, changing the damp paper towels out for dry ones after about 12 hours and stirring occasionally.

To make the pumpkin seeds:

  1. Preheat oven to 325°F. Very lightly grease a large baking pan, set aside.
  2. In a small bowl, mix together sugar, cinnamon, and salt. Set aside.
  3. Melt coconut oil or butter in a large microwave safe bowl or on the stovetop in a 4-quart pot.
  4. Remove from heat and stir in vanilla.
  5. Mix in pumpkin seeds until they are all evenly coated.
  6. Add dry ingredients to the pumpkin seeds and mix until all they are evenly coated.
  7. Spread pumpkin seeds on your prepared baking pan in single layer.
  8. Bake for 25-35 minutes, stirring every 10 minutes, until seeds begin to brown.
  9. To test for doneness: remove a few seeds from the pan and let sit on the counter to cool. If they harden up the seeds are done. If they remain soft, return to the oven, checking them after 5 minutes. Continue baking in 5-minute intervals until done.
  10. Once seeds are done, transfer them from the warm pan to another pan lined with parchment paper to let cool.

Now that you have learned about the benefits of consuming pumpkin seeds and some snack recipes, gather with your friends and family (socially distant) not only to carve pumpkins but also to roast the seeds. This can be your new Halloween tradition!
