Have you ever wondered how something works or how something was made? In the monthly Science Behind series, we partner with a guest presenter to explore a large variety of interesting topics. The Science Behind series offers opportunities for adults to apply new knowledge and skills to everyday life, while having fun!

What Are Phytonutrients & How They Contribute To Our Health

Join Walking Mountains Science Center for the Science Behind Phytonutrients on Wednesday, March 19, 2014 at 6:30 PM. What are phytonutrients, you ask? Certified Health Coach and Inspirational Speaker Angela Gaffney will show you! Simply, phytonutrients are the chemicals in plant foods that can keep us healthy and prevent disease.

It wasn’t too long ago that Angela faced her own struggle with health. She worked many hours as an executive in Corporate America and traveled extensively. Although Angela enjoyed this lifestyle, it took a toll on her. Angela’s body began to fail her and in the end she suffered from chronic fatigue, severe joint pain, dizziness, loss of memory, severe muscle weakness and digestive problems.

Upcoming Science Behind Schedule

After struggling with these health issues and receiving no diagnosis for almost 2 years, Angela decided it was time she made a positive life change. She dramatically changed her lifestyle and eating habits.

Slowly but surely her health began to improve and as an added bonus, so did the health and well-being of her husband and children. Today, Angela leads an active life without chronic fatigue, joint pain, muscle fatigue and dizziness. She is back to living the life she loves!

During this Science Behind program, we will explore:

  • What phytonutrients are and the key role they play in healthy living
  • Oxidative stress and understand the importance of antioxidants
  • Meal planning around phytonutrients
  • Recipes to share with family and friends

We will also “play with food” and try samples of healthy, phytonutrient-rich snacks! The Science Behind series of classes highlights useful and fun skills that have underlying scientific principles. Each class provides a hands-on, interactive component with instruction from a local subject matter expert and a Walking Mountains educator. Classes are held once a month at Walking Mountains Science Center in Avon.

Morning Glory Smoothie
1 cup coconut water
1 cup kale
1Ž2 of a large banana
1Ž2 cup frozen blueberries
3 frozen strawberries
5 chunks frozen pineapple
1 TBSP coconut oil
1 TBSP chia seeds

Blend the coconut water, kale and banana until smooth. Add frozen fruit, coconut oil and chia seeds and blend until smooth.
Variations: You may add a nut butter, hemp hearts, or brown rice protein powder for additional protein in your smoothie.
